- 2 lbs. yellow squash, sliced
- 1 tbsp. chopped onion
- 1 tbsp. olive oil
- ½ tsp. salt
- ¼ tsp. pepper
- 2 eggs, beaten
- ¼ lb. shredded cheddar cheese
- 2 tbsp. butter
- ½ cup cracker crumbs
- In a large skillet, heat olive oil. Saute squash and onion until lightly brown. Remove from heat and cool.
- In a medium bowl, combine eggs, cheese, pepper, salt, and pepper. Add cooked squash and onion. Mix.
- Pour the mixture into a greased oven-proof dish. Sprinkle cracker crumbs. Dot with butter.
- Bake at 350 degrees F for 25 minutes.
- Makes 6 servings.
