Squash Casserole

  • 2 lbs. yellow squash, sliced
  • 1 tbsp. chopped onion
  • 1 tbsp. olive oil
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2 eggs, beaten
  • ¼ lb. shredded cheddar cheese
  • 2 tbsp. butter
  • ½ cup cracker crumbs
  1. In a large skillet, heat olive oil. Saute squash and onion until lightly brown. Remove from heat and cool.
  2. In a medium bowl, combine eggs, cheese, pepper, salt, and pepper. Add cooked squash and onion. Mix.
  3. Pour the mixture into a greased oven-proof dish. Sprinkle cracker crumbs. Dot with butter.
  4. Bake at 350 degrees F for 25 minutes.
  5. Makes 6 servings.
