- 1 medium onion, chopped
- 2 large sweet potatoes, peeled and chopped
- 5 cups beef or vegetable stock
- 2 cups canned tomatoes with juice
- 1 tsp. olive oil
- ¼ tsp. ground white pepper
- ¾ cup orange juice
- Additional water for desired consistency.
- In a soup pot, saute onion in olive oil until translucent.
- Add sweet potatoes and broth and bring to a boil. Reduce heat and simmer, partially covered. until sweet potatoes are tender, 20-25 minutes. Remove from heat.
- Stir in tomatoes and ground white pepper. Puree in blender or food processor until smooth. Return to soup pot.
- Add orange juice (and water if desired). Heat gently until hot and serve.
- Makes 4-6 servings.
