Miso Vinaigrette Dressing

  • 2 tbsp. miso (fermented soy bean paste)
  • ½ cup rice vinegar
  • ¼ cup olive oil
  • 1 tbsp. minced, peeled fresh ginger
  • 1 tbsp. sugar
  1. In small bowl, stir miso into vinegar until smooth. Add to blender with remaining ingredients; blend until smooth.
  2. Makes about 1 cup.
