Gazpacho

  • 4 cups tomato wedges
  • 1 cup peeled cucumber chunks
  • ½ cup green bell pepper chunks
  • 1 whole medium scallion
  • 2 tbsp. red wine vinegar
  • 2 tsp. olive oil
  • 1 clove garlic, minced
  • ¼ tsp. salt, or to taste
  1. Place all ingredients in a blender or food processor container fitted with a steel blade. Cover and process until smooth.
  2. Chill.
  3. Makes 4 servings.
