Chunky Vegetable Salad

  • 2 tbsp. olive oil
  • 2 tbsp. red wine vinegar
  • ¾ tsp. salt
  • ½ tsp. sugar
  • ¼ tsp. coarsely ground black pepper
  • 2 large tomatoes, cut into thin wedges
  • 1 large yellow pepper, cut into bite-size chunks
  • 1 medium cucumber, unpeeled, cut into bite-size chunks
  • ½ small red onion, finely chopped
  • 1 tbsp. chopped fresh chervil. cilantro, or parsley
  1. Prepare dressing: In a medium bowl, with wire whisk or fork, mix first 5 ingredients until blended.
  2. Add remaining ingredients. toss to coat.
  3. Makes 4 accompaniment servings.
