- 2 tbsp. olive oil
- 2 tbsp. red wine vinegar
- ¾ tsp. salt
- ½ tsp. sugar
- ¼ tsp. coarsely ground black pepper
- 2 large tomatoes, cut into thin wedges
- 1 large yellow pepper, cut into bite-size chunks
- 1 medium cucumber, unpeeled, cut into bite-size chunks
- ½ small red onion, finely chopped
- 1 tbsp. chopped fresh chervil. cilantro, or parsley
- Prepare dressing: In a medium bowl, with wire whisk or fork, mix first 5 ingredients until blended.
- Add remaining ingredients. toss to coat.
- Makes 4 accompaniment servings.
